Meal Plan Monday

I am totally getting into the swing of this and it really has been helping us to eat at home far more than we were.

I am so proud to say last week I cooked at home all five days during the work week!  That is a HUGE accomplishment for us as a family!

With the summer here I am looking to include more grill recipes, light meal ideas for the heat, and overall summer-friendly recipes so I have been spending way too much time on Pinterest.

Heck if it wasn’t for Pinterest my project would be dead in the water!

Anyway! This week I got tons of great recipes to share! I hope you enjoy them!

Monday

Sante Fe Grilled Chicken Salad – This is a great Monday night recipe for us because I can grill the chicken up on the grill, and prepare the salad itself during the day so we can hurry out to softball. The recipe is great, and it is a healthy options – but also filling!

Tuesday

Korean Beef – I am all about trying some new things with this project, and of course my husband is about trying new food as a whole. I thought this would be a fun different kind of beef since most of the time we are eating the same recipes with beef, or ground beef!

Wednesday

Double Crunch Honey Garlic Pork Chops – I love trying something new with pork. We eat very little of it in our house because I am not a huge fan and the kids seem to be following in my foot steps. Although I don’t see how we can go wrong with this flavorful dish!

Thursday

Homemade Pizza – No special recipe, just picking up a couple packages of dough from our local grocers deli area and rolling it out for little personal pizza’s. Whatever is leftover for the dough we typically will use to make a cheesy bread, or garlic bread. Lots of bread! It is especially fun for the kids!

Friday

Buttermilk Baked Chicken – Baked is of course better than fried!  Chicken is a hit in our house, and with the appetites on these kids it is filling!

Side Dishes

Cheesy Garlic Bread
Grilled Veggies
Veggie Stir Fry
Smashed Potatoes
Broccoli Grape Pasta Salad
Homemade fried rice
Creamed Cheese Biscuits
Fruit Salad

Desserts

Sour Patch Kids Cupcakes
Fresh Fruit
Sugar Cookies
Red Velvet Brownies
Ice Cream again … Can you tell I love going out to the farm here for ice cream?
Apple Nachos
Pink Lemonade Pie

Happy cookin’!
