Meal Plan Monday

Meal plan Monday is back after a week off because of the holiday last Monday. I didn’t think anyone would be reading blogs or meal planning on such a busy day. And boy was it busy for us!

I am getting back into the swing of things and while I am sure I will miss some Monday’s here and there it is something I am working on regularly doing. I have also decided over time I am going to throw in a couple recipes I learned from my mom over the years.

As well as side dishes. I got some comments that I don’t feed my kids vegetables or frankly much of anything because I was only including “main dishes” in my meal plans.

I thought side dishes were kind of… common sense. At least for me they were.  Depending on the meal plan for the week I am going to do my best to include sides as well.

First I am going to do the main meal plan for the week. Then I am going to include some mix and match type side dishes which are super easy to make!

Monday

I have decided to dub Monday night grill night in our house since my husband plays softball every Monday night. It isn’t easy to make a good meal when we are on such a tight time constraint. Do it up any way you want… it can be burgers and hot dogs, chicken, steaks… whatever goes! (I am planning on writing up a recipe for my honey mustard chicken on the grill when I make it again!)

Tuesday

Chicken & Rice from Artsy-Fartsy Mama – This is a good one. Simple, filling, and fun for kids. Depending on that your kids like you can also throw throw some veggies in with the recipe to cook. I am planning on throwing in some peas. I think they will go nice.

Wednesday

Cowboy Casserole – I love this one! I have made it a hand full of times and everyone loves it which is hard to pull off with our family. It is also one of those really cheap but really filling meals!

Thursday

Taco Salad – One of my good friends makes this A-MAZ-ING Taco Salad for all the fire department picnics and it may not sound like a meal in itself, but you can totally make it into one. Adding some corn chips or or whatever and you have a great dinner for the night!

Friday

White Cheddar Chicken Pasta from Homemade by Holeman – I haven’t made this one yet so there really isn’t much I can say about it. It looks delicious though!

Side Dishes

A couple things I pulled together for side dishes include:

Oven Baked Zucchini Fries
Homemade French Fries
Fresh Mixed Veggies (Carrots, Peas, Green Beans & Corn)
Oven Roasted Asparagus
Chopped Salad
Pinwheel Pasta Salad
Garlic Bread with Cheese
Parmesan Roasted Potatoes

Dessert Ideas

Because we all have husbands who are wondering… Ok now what is for dessert…  Well at least mine does!  Don’t over do it though. Dessert one night during the week is more than enough!

Chocolate Chip Whoopie Pies with Strawberries
Strawberry Bread
Rice Crispy Treats
Cinnamon Rolls
Ice Cream Cupcakes

  1. Since we get the pork from the pig we had butchered this week, we will be having pork chops and scalloped potatoes on Thursday and it’s been a while for meatloaf so we’ll be having that tomorrow. I don’t write sides on my meal plans either :)
