Gettin’ Down With Our Meal Plan

My first week of meal planning was a total success!  See even Addison loved everything I made, and as a matter of fact so did my sons. And they are hard to impress when it comes to anything beyond cheese burgers and grilled cheese!

Monday I had a hiccup with getting our grill running so we went out to eat. No big deal… then Tuesday and Wednesday night I cooked. Total success. The picture is from Tuesday night’s three cheese chicken Alfredo bake. – Speaking of that, be sure to check out the recipe from The Plain Chicken because it was a-maz-ing!

At the end of my meal plan last week I said if I cooked 3 out of the 5 meals I planned it would be a success, and alas I am extremely proud of myself because I did it!

I even baked a couple times, including some awesome apple raspberry muffins. Yummo!

I decided every Monday I am going to post our meal plan for the week. To share the recipes and progress, but also as a guide for myself because I hate it when I find an awesome recipe and then my Pinterest boards eat it.

I am also going to be making a Pinterest board dedicated to my dinner projects. And by next Monday I am going to work on making this a “Meal Plan Monday” blog hop if anyone else wants to take part!

Ok so this is our week this week:

  • Monday – Baked Chicken with Mac N’ Cheese – One of my husband’s favorite and his recipe!
  • Tuesday – Mexican Dorito Casserole – Great recipe from Jam Hands
  • Wednesday – Hot Dogs & Hamburgers on the Grill – Simple!
  • Thursday  – Meatloaf – I hate it but my husband loves it!
  • Friday -  Out!

Friday night we are going out for pizza with friends coming down to visit from upstate New York. I cannot wait!  Actually last year when they came down, we went out for pizza at the same place and then I went into labor with Addison! HAHAHAH!

So it is a shorter recipe week for me.

I totally apologize for getting this up a day late too… it has been a rough couple days. I think I have some kind of stomach bug, but of course Mom’s don’t get sick days!

I want to thank my husband big time for helping cook dinner last night!

  1. Here is a meatloaf recipe that you might love. Since it’s meatloaf, ingredients aren’t in exact measurements!

    Put 3-4 slices of bread in a bowl, pour milk over it to soak. Not a lot of milk, just enough to soak the bread. Maybe half a cup.

    Pound to pound a half of ground beef in another bowl, mix in 2 eggs. Add in about half a cup of parmesan cheese. Now pour in the milk-bread mixture. Mash it all together & form a loaf.

    Put it on a broiler pan if you have one, so the juices can drip down.

    Take some bacon strips & cover the meatloaf, strip by strip. The bacon will be too long, so tuck it under the meatloaf.

    This is the KEY ingredient! Trust me, when the bacon cooks, you’ll be able to cut it with a fork, it will just cook itself right into the meat!

    The next thing is to add a mixture of ketchup, a little brown sugar, & a little hot sauce together in a bowl. Like 7-8 drops of hot sauce, not too much. Not too much brown sugar either.

    Cover the bacon w/ the sauce & then cook it for 45 min-an hour.

    Take it out & put more sauce on it. Cook another 15 minutes or so.

    the sauce might turn dark brown on the sides near the bacon but it’s not burned.

    It is DELICIOUS!!!

    And not at all like the yucky meatloaf everyone expects! LOL.
